Rib eye is one of the best and tastiest cuts of beef you can buy. Take a 250gm steak and rub it all over with a good lug of vegetable oil, a pinch of sea salt, and some freshly ground black pepper.
Add the steak to a very hot pan and leave it for one minute. Then turn it over and leave to cook for another minute.
Add half a clove of garlic, a sprig of thyme, and a big knob of butter to the pan. You can never have too much butter!
Cook for another 4 minutes for a medium-rare steak, turning every minute. Reduce the cooking time if you like your rib-eye rare, or increase it for medium or well-done steak.
Once cooked to your liking, rest the steak for 2-4 minutes on a plate that collects all the lovely juices.
Carve with a sharp knife and serve with the resting juices drizzled on top.
